Gesha Washed | Castillo Natural
Hervey and Rocio Cuellar have been coffee producers for many years, but four years ago they decided to move beyond the commodity market and explore specialty coffee together. They began planting Gesha, while also experimenting with ways to bring more value and character to their Castillo.
It took countless trials to find the profiles they were looking for. After around dozens of experiments with different fermentation and drying methods, they finally found the clean, floral expression they wanted for their Gesha. They then turned their attention to their Castillo, developing a natural process that brings out a very different side of the variety.
We keep tasting many of their experiments at our lab in Pitalito, and it is fascinating to follow their journey. We’re now excited to share the results with roasters: a floral washed Gesha and a distinctive natural Castillo, both shaped by their curiosity and determination to keep learning and experimenting.
